Two days later, we made this cake again.
On Sunday, I made the cake, while my daughter made the frosting. Today, she made the cake, and I used the left-over frosting. Instead of frosting the middle layer, I used my home-made (from yesterday) raspberry jam. While this blends in with the layers and looks far less dramatic, it does taste quite good.
To top it all off, we added a generous sprinkling of coconut flakes to the outside.
