Butterbean Pasta Salad


So, today I was in my usual quandary regarding "what to make for dinner in the time I've got" and came up with this pasta salad recipe.

Butterbean Pasta Salad

Boil: one large pkg salad macaroni.

Add to the cooked noodles:

A generous palmful of sundried tomatoes, soaked in olive oil (and also some of the oil, for flavoring)
4 chopped green onions
3 or 4 chopped garden fresh tomatoes
One can of Italian Butterbeans
2 left-over bratwurst (Uli's or other good natural sausage), cooked and sliced into rounds
At least 2 or 3 oz. of Gorgonzola
1/2 C grated Parmesan
Salt and pepper to taste
And a little touch (not much, as this isn't a gooey pasta salad) Annie Tuscan dressing

Of course, this is subject to change, and tweaking to your liking - but it *did* pass the Husband Test, and consequently didn't last very long. In fact, it barely made it into the Left-Overs category, (and I'd tried so hard to get it there by making lots of it).

With the mornings getting into the 30's, and the house becoming chilly, this salad filled the "Comfort Food" niche quite nicely~
