No mayo coleslaw
Really, there are so many wonderful things to add to coleslaw, and green pepper or snow peas fit in beautifully.
CaplanskyColeslaw
Here's another pretty one:
"excellent coleslaw - no mayo to be found! Nicely vinegared."
Cabbage Salad or, Coleslaw Without the Mayo
This isn't the greatest photo, but this is my answer to no-mayo cabbage salad.
Roughly, the dressing consists of:
Extra virgin olive oil
Balsamic vinegar
honey or sugar (just enough to temper the vinegar)
salt (a pinch)
Pepper
I have made others that use lime juice in place of the Balsamic vinegar, and I like that very well indeed, but yesterday I had no limes in my kitchen, so I had to substitute. I'm very happy with the result.
I should also mention the other ingredients:
One head of cabbage, chopped
Three (at least) green onions (green and white parts), chopped
One or two large carrots, diced
Three large celery stalks, sliced
And, I never say no to a sprinkle of sesame seeds right before eating the salad.
Simple, satisfying, light.
Enjoy~

Olympic Podium cake
So, is this Shaun White atop the cake? This seems to be his signature hair. . .

mango cake
I know this has nothing to do with the Olympics, but I couldn't pass this mango birthday cake up! This looks terrific!

WOw!
Photo note:
"What a fun project! It was huge, and took days to complete. The backbround scene was carved out of styrofoam and covered with royal icing. As a purist, I had an objection to that, but it was the only way to accomplish the goal..."
Vancouver Olympics Cake
This one is great!

"Made for a little girl who loves the Vancouver Olympic mascots. Rich chocolate cake with chocolate buttercream and hand sculpted gumpaste figures."
Mice Olympics
And today, I'm looking at Olympics inspired cakes.
