Eggs Nicole and Strawberry Waffles - The Oak Table in Kingston WA

Eggs Nicole - A dish as beautiful as its name - a delectable blend of skillfully sautéed, fresh mushrooms, spinach and onions prepared with scrambled eggs and Swiss cheese on a open face croissant, with a covering of Hollandaise sauce. Served with our potato pancakes.

I totally recommend it. My husband and his hiking buddy would go there before backpacking. What a great way to start!

Here is an image of my daughter's breakfast - note, the portion isn't a shy one. Somehow I found the strength to help her finish it. I mowed two lawns after that. ; )
