Dorm Food - Breakfast

breakfast, originally uploaded by rosebud518.
So, my daughter is off to college. And she is realising even more just how good home cooking is. I've gotten texts and calls about dining hall offerings, and queries from the grocery store: "what do I get for breakfast?" So far, she's not enchanted, but given time. . . ?

So, what are your thoughts on dorm food? Any ideas, suggestions for a new college student? Full meal plan, or the bare minimum with plenty of trips to the grocery?

Navajo Fry Bread
This is another food I need to try. I totally missed out on the Suquamish Chief Seattle Days this year. Next year!
Frybread
Photo note:
"Frybread over the grill.
How do you like your frybread?
I've heard they sell it in the midwest at fairs and call it elephant ears.
A variety of toppings can be added to frybread.

Elephant Ear 2
Because I couldn't eat everything in one day while at Bumbershoot, I did have a bite of a friend's Elephant Ear.
This photographer says:
"Not too sweet or too buttery."
elephant.ear.fish
Photographer's note:
""CA TAI TUONG" or the "elephant ear" fish is one of the delicacies in Vietnam cuisines.
The picture showed the real fish but already well-cooked. It is normally deep-fried with its scales intact and eat along with the Vietnamese's sauce.

Lamb Gyro
Photographer's note:
"(Zaina, Seattle, WA)
I haven't had one of these lamb gyros in so long, and I remembered them being so good. While it was still pretty good, I am pretty sure that the meat is now processed instead of cooked fresh there. But the saucy spiciness is still delicious. It was a little pricey at about $6 but it was filling.

Fries bigger than your head
Another Bumbershoot "had-to-have" item was curly fries.
Photographer's note:
"I think this was at one giant potato that the guy at the tent drilled to oblivion with a corkscrew bit."
Fruit on a stick
While at Bumbershoot this past weekend, I had my first ShishkaBerry skewer. I had the strawberrys dipped in white chocolate and swirled in dark chocolate. Very good. The criteria for my dessert choice? It had to be something I couldn't normally get elsewhere.
The photographer of this image notes:
"ShishkaBerry's was one of the scores of food vendors at Bumbershoot."

Garlic Herb Butter Shrimp Pasta
Terrific lighting on this shot.
Photo note:
"I had never cooked shrimp before, so I wanted to give it a try. It's super quick and easy to cook, although cleaning was a bit of a pain. I sauteed them in butter, garlic, basil, parsley, salt and pepper, and then tossed that over some angel hair pasta. So scrumptious.

Garlic Shrimp & Grape Tomatoes
This looks fabulous, and here's what the photographer has to say:
"Last nights dinner, this is tossed into pasta. This literally takes 15 minutes to make.
1lb - Thin Spaghetti
1lb - Small Shrimp, Raw, Peeled, De-veined
2tbsp - Lemon Zest (zest of one lemon)
1/2 a lemon worth of juice
1/4c Olive Oil
6 - Cloves Garlic, minced
1pint - Cherry or Grape Tomatoes, halved
4 - Scallions, sliced thin
1/4c - Dry Vermouth
1/2cup - Flat Leaf Parsley, Chopped fine
20 - Basil Leaves, torn
S&P
Heat large pot of water for pasta. When boiling add salt and cook pasta al dente (~7 mins).
Heat a large non-stick skillet (or seasoned cast iron) over medium to med-high. Season the shrimp withe the lemon zest, lemon juice and a little salt. Add the olive oil to the hot pan and then add the shrimp. Cook for a minute then add garlic, tomatoes, scallions and toss, cooking for another minute or two until the shrimp are firm and pink (that is that stage we are at in this picture). Add the vermouth and the herbs. Turn off the heat. Drain pasta well add to the sauce. Toss and combine the sauce with the pasta and season with S&P.
Serves 4-6
Note: I prefer to use 3/4 lb of pasta just so that there is more sauce in the mix.
Note: Bay Scallops make a great substitute for shrimp.
Note: Be aware of flame-ups when adding any alcohol to a hot pan
Note: Toss in pot you used to boil noodles as skillet it probably too small for this."
Shrimp Scampi
Photographer's note and a link to their blog:
" Shrimp Scampi I made for dinner this evening.
This is one of the favorite dishes I make. You can find the recipe on my blog. "
