"Holy Saturday (Μεγάλο Σάββατο) meant food preparation! It isn't supposed to be a happy day, but we had lots of fun nevertheless! The kokoretsi is being prepared, the lamb's intestines, heart, lungs, kidneys, etc. -heavily seasoned- are put on a spit. It might sound like a vegetarian's nightmare (and not only), but it tastes great!
